Our Beef
All of our beef is 14-day dry-aged, and comes from the plains outside Colorado Springs, where our cattle spend their lives outdoors with views of Pikes Peak and the foothills of the Rocky Mountains. They roam freely, grazing on grass and living the way cattle were meant to live.
When it’s time to finish, we introduce grain for a short period of time (about 90 days) to enhance the flavor profile. While fully grass-finished beef can sometimes have a stronger, gamier taste, this short grain-finishing period creates a richer flavor while maintaining the benefits of grass-fed beef.
Raising cattle on grass takes more time, more land, and more care than conventional grain-fed operations. For us, that extra care is worth it – for our family and for yours.
Nutritional Benefits
Grass-fed beef may offer several potential health benefits. According to the Mayo Clinic, when compared with conventional beef, grass-fed beef may contain:
- Lower total fat content
- More heart-healthy Omega-3 fatty acids
- Higher levels of conjugated linoleic acid (CLA)
- More antioxidant vitamins such as Vitamin E
A Limited First Offering
During this round of beef offerings, we are in the construction phase of building our distribution and ordering system. This website is temporary while we work toward our full online shopping experience.
For this initial launch, we wanted to make a limited offering available to our friends and family first. Because of that, our selections will be slightly limited for this round.

Package Weights & Packaging
The weights listed in our bundles and ¼ shares are estimates and may vary slightly. Natural variations in carcass weight can affect the final packaged weight. If needed, we will adjust the price or package contents as closely as possible to match the original description.
All of our beef is:
- Expertly butchered
- Vacuum-sealed in cryovac packaging
- Frozen to preserve freshness and flavor
Properly stored, our beef can last up to one year in your freezer.
